Olio Nuovo
In autumn, the first oil that is pressed is called “Olio Nuovo”. It is the freshest, fruitiest, and most pungent of oils, and it must be used quickly.
Old Chatham Ranch is located in the rugged hills of Mendocino County’s Yorkville Highlands appellation, where the soil and climate are ideally suited for olives. Our Italian varietals and California Mission trees are hand tilled and grown without pesticides. Join us in celebrating the harvest with our Olio Nuovo!
